Tuscan Kale Salad


Ingredients

  • 4-5 oz kale

  • 1 container sundried tomatoes

  • 1 can of quartered artichokes

  • 1 sweet onion

  • Optional:

    • 1 can northern beans

    • freshly grated parmesan cheese

For the Dressing:

  • sundried tomato oil

  • 1 bunch parsley

  • 2 tsp lemon juice

  • 6 cashews

  • lemon zest if desired

  • salt

  • pepper


Directions:

  1. Add sundried tomato oil to a blender or food processor

  2. Drain, rinse, and chop artichoke hearts

  3. Chop an onion

  4. Add kale, onion, artichoke hearts to a bowl

  5. Add the rest of the dressing ingredients to a blender or food processor

  6. Once the dressing is blended, pour over the salad

  7. Garnish with freshly grated parmesan cheese if desired
