Tuscan Kale Salad
Ingredients
4-5 oz kale
1 container sundried tomatoes
1 can of quartered artichokes
1 sweet onion
Optional:
1 can northern beans
freshly grated parmesan cheese
For the Dressing:
sundried tomato oil
1 bunch parsley
2 tsp lemon juice
6 cashews
lemon zest if desired
salt
pepper
Directions:
Add sundried tomato oil to a blender or food processor
Drain, rinse, and chop artichoke hearts
Chop an onion
Add kale, onion, artichoke hearts to a bowl
Add the rest of the dressing ingredients to a blender or food processor
Once the dressing is blended, pour over the salad
Garnish with freshly grated parmesan cheese if desired
