Chopped Greek Salad


Ingredients

  • 1 quart grape tomatoes

  • 1/2 red onion

  • 1 cucumber

  • 1 bell pepper (any color)

  • feta

  • Optional:

    • banana peppers

    • pepperocinis

    • kalamata olives

    • chickpeas

For the Dressing:

  • 3/8 cup olive oil

  • 1/8 cup red wine vinegar

  • 1 tsp oregano

  • 1 tsp parsley

  • 2 garlic cloves

  • dijon mustard

  • maple syrup

  • salt and pepper


Directions:

  1. Chop all veggies and add to bowl

  2. Mix dressing ingredients together and shake well

  3. Pour over veggies and stir

  4. Garnish with 4-6 kalamata olives if desired
