Chopped Greek Salad
Ingredients
1 quart grape tomatoes
1/2 red onion
1 cucumber
1 bell pepper (any color)
feta
Optional:
banana peppers
pepperocinis
kalamata olives
chickpeas
For the Dressing:
3/8 cup olive oil
1/8 cup red wine vinegar
1 tsp oregano
1 tsp parsley
2 garlic cloves
dijon mustard
maple syrup
salt and pepper
Directions:
Chop all veggies and add to bowl
Mix dressing ingredients together and shake well
Pour over veggies and stir
Garnish with 4-6 kalamata olives if desired
