Italian Bean Salad


Ingredients

  • 1 can black beans

  • 1 can chickpeas

  • 1/2 red onion

  • 1 quart grape tomatoes

  • 1 cucumber

  • banana peppers

  • curly parsley

  • 1 container mozzarella pearls

For the dressing:

  • 1/4 cup evoo

  • 1/4 cup red wine vinegar

  • dijon

  • maple syrup

  • banana pepper juice


Directions:

  1. Drain and rinse black beans and chickpeas

  2. Drain and rinse mozzarella pearls

  3. Chop and add all veggies to a bowl

  4. Mix dressing together and shake or whisk together

  5. Pour over veggies and stir together
