Italian Bean Salad
Ingredients
1 can black beans
1 can chickpeas
1/2 red onion
1 quart grape tomatoes
1 cucumber
banana peppers
curly parsley
1 container mozzarella pearls
For the dressing:
1/4 cup evoo
1/4 cup red wine vinegar
dijon
maple syrup
banana pepper juice
Directions:
Drain and rinse black beans and chickpeas
Drain and rinse mozzarella pearls
Chop and add all veggies to a bowl
Mix dressing together and shake or whisk together
Pour over veggies and stir together
