Kale Soup
Ingredients
1 sweet onion
1 container sundried tomatoes
2 cloves garlic
3 Tbsp tomato paste
1 lb italian turkey sausage
8-10 oz kale
2 cans cannellini beans
2 32 oz containers of chicken broth
1 Tbsp of butter
1 tsp oregano
1 tsp basil
garlic powder
onion powder
red pepper flakes
optional: 1/4 cup half and half
Directions:
Pour sundried tomato oil into a large pot
Add onion and cook until translucent
Add 2 cloves garlic, 1 T of oregano, 1 T of basil, and 3 T of tomato paste
Add sausage, garlic powder, onion powder, and red pepper flakes, cook until browned
Add a heaping amount of kale, even if it is overflowing from the pot (it will shrink)
Add cannellini beans, sundried tomatoes, and chicken broth
Stir and cover until kale begins to reduce down and heat up
Add butter and stir, bring to a boil
Reduce heat and simmer for 20 minutes
If desired, add half and half and stir
