Kale Soup


Ingredients

  • 1 sweet onion

  • 1 container sundried tomatoes

  • 2 cloves garlic

  • 3 Tbsp tomato paste

  • 1 lb italian turkey sausage

  • 8-10 oz kale

  • 2 cans cannellini beans

  • 2 32 oz containers of chicken broth

  • 1 Tbsp of butter

  • 1 tsp oregano

  • 1 tsp basil

  • garlic powder

  • onion powder

  • red pepper flakes

  • optional: 1/4 cup half and half

  • i do a whole onion in my sundried tomato oil, add garlic, 1t oregano, 1t basil, 3T tomato paste, add sausage (i do turkey sausage) and i like to add garlic powder onion powder and red pepper flakes, then add an insane amount of overflowing kale, 2 can cannelinii beans, 1 thing of sundried tomatoes, and 2 32 oz chicken broth, 1T of butter and option 1/4c heavy cream or half and half (i can probably drop this part) simmer for 20 and boom, salt and pepper to taste

Directions:

  1. Pour sundried tomato oil into a large pot

  2. Add onion and cook until translucent

  3. Add 2 cloves garlic, 1 T of oregano, 1 T of basil, and 3 T of tomato paste

  4. Add sausage, garlic powder, onion powder, and red pepper flakes, cook until browned

  5. Add a heaping amount of kale, even if it is overflowing from the pot (it will shrink)

  6. Add cannellini beans, sundried tomatoes, and chicken broth

  7. Stir and cover until kale begins to reduce down and heat up

  8. Add butter and stir, bring to a boil

  9. Reduce heat and simmer for 20 minutes

  10. If desired, add half and half and stir
