Homemade Pizza Dough
Ingredients
650g unbleached bread flour
395g warm water
2.5 Tbsp (35g) olive oil
1 Tbsp light or dark brown sugar
2 tsp active dry yeast
2 tsp salt
Directions
In a large bowl mix warm water, dark brown sugar and yeast and let it sit for 5 minutes
Add flour and olive oil
Mix for a minute or so and add salt
Mix for 4-5 minutes until the dough is elastic (no longer sticky)
Weigh dough all together and divide the total dough weight by 8 or 4, depending on how many doughs you are making
Divide the dough, and roll each into a ball
Place in the fridge until 2-3 hours before pizza making
Tips:
* You can substitute sugar for honey or maple syrup
* I use a kitchen aid mixer for the first 3-4 minutes and do the last minute of kneading by hand
* I typically divide into 8 dough balls, at about 137g each
* We like our dough at room temp before shaping, so I remove from the fridge 2-3 hours before we plan to make pizza
*If making day of, skip the fridge and leave on the counter until the dough has risen
*This dough is the best 2-3 days after putting in the fridge
After going to Italy multiple times, I had to find a way to enjoy small pieces of it at home. We got this pizza oven, and now homemade pizza nights are one of our favorite dinners! It has become a tradition to do pizza when people come to visit. This is a 60% hydration dough and is so chewy and delicious.
