Egg Casserole


Ingredients

  • 16 oz turkey sausage

  • 1-pint low-fat cottage cheese

  • 6 bell peppers (2 red, 2 yellow, 2 orange)

  • 1 large onion

  • ½ cup whole wheat flour

  • 1 tsp baking powder

  • 12 eggs

  • 4 oz mozzarella cheese

  • 4 oz cheddar cheese

  • 3 Tbsp unsalted butter

  • Seasonings: garlic powder, onion powder, cayenne pepper, chili powder, salt, pepper


Directions:

  1. Cook peppers and onions on low medium heat until soft. Season with garlic powder, onion powder, cayenne pepper, chili powder, salt, and pepper.

  2. Simultaneously cook ground chicken on low heat until brown, season with garlic powder, onion powder, salt and pepper

  3. Preheat oven to 375 degrees.

  4. In a large bowl, add eggs, flour, cottage cheese, melted butter, baking powder, mozzarella cheese, cheddar cheese and mix together

  5. Drain grease from ground chicken and add to large bowl.

  6. Add peppers and onions to large bowl.

  7. Mix everything in a large bowl well.

  8. Spray a 9x13 baking dish with cooking spray.

  9. Add mixture to baking dish and bake for 40 minutes or until the center is solid.
